Study Suggests Even More Reasons to Eat Your Fiber

Researchers have found that plant foods with insoluble fiber, such as vegetables, fruits, nuts, and whole grains, contain unique bioactives, including beta-carotene, lycopene, quercetin, and lutein. Bioactives have been associated with health benefits, such as lower incidence of Type 2 diabetes and cardiovascular disease. Furthermore, researchers noted that plant byproducts of food productions (e.g., pells, hulls, pulp) could be used to fortify processed foods.
