Mediterranean Quinoa Salad

Serves 6 (1 cup servings)

Ingredients

  • 1 cup quinoa (uncooked)
  • ¼ cup red onion, finely chopped
  • ½ cup Kalamata olives, chopped
  • 1.5 cups cherry tomatoes, quartered, or regular tomato, chopped
  • 1.5 cups cucumbers, chopped
  • 1 15oz can chickpeas, drained and rinsed
  • 1 tbs olive oil (optional)
  • 2 tbs lemon juice
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 2 tsp fresh parsley
  • Black pepper to taste

Directions

1. Cook quinoa according to package directions. Set aside to cool.

2. In a large mixing bowl, mix cooled quinoa with the rest of the ingredients.

3. Serve room temperature or refrigerate and serve cold.
