• 1 cup cooked quinoa
• 1 cup black beans
• 2 medium carrots, chopped
• 2 cups chopped broccoli
• 2 medium tomatoes, chopped
• 2 spring onions or scallions, sliced
• 4 tablespoons low-fat (1%)
• Greek yogurt
• 2 tablespoons Basic Vinaigrette
Combine first six ingredients in bowl. In small bowl, combine yogurt and vinaigrette. Whisk to combine. Pour over salad and toss.
