Roasted Red Cabbage Coleslaw

• 1 small head red cabbage, chopped
• 2 cups shredded or matchstick carrots
• 1 1/2 cup scallions
• 1/2 cup fresh dill, chopped
• 1 cup fresh cilantro, chopped
• 1/2 cup unsalted, roasted sunflower seeds
• 1/2 cup unsalted pumpkin seeds
• 1/2 apple cider vinegar
• 1 tbsp honey or maple syrup
• Salt and pepper to taste

Combine ingredients in a large bowl. Serve immediately or let marinate in the fridge for a few hours or overnight. This recipe will stay good in the fridge for about a week.
