Sauteed Kale

• 1 teaspoon olive oil
• 1  clove garlic, minced
• 2  cups kale
• 1⁄2 red bell pepper, diced

Place skillet over medium heat and add olive oil and garlic. Sautee until softened and fragrant, about one minute. Add kale and peppers and continue to cook until kale is softened.
